By far the easiest way to show off to your guests. A great starter before a BBQ or a proper sit down dinner. This cold, refreshing, soup takes less than 15 minutes and tastes fantastic. The Spanish know best and they have proven it! I used chopped red and green peppers from Foodsaver Stores (a selection that seems to be made for this!)

Ingredients (* from Foodsaver Stores)
  • Half a bag of chopped green & red peppers from Foodsaver Stores
  • 5-6 tomatoes
  • 1 garlic clove
  • 1 onion
  • 1 small cucumber
  • 1 cup of water
  • 2 tbs of extra virgin olive oil (I used Organic Olive oil “Chorio” from Foodsaver Stores
  • 2 tbs of sherry vinegar or other vinegar
  • 1 large pinch of salt (to taste)
  • 1 large pinch of pepper (to taste)

Roughly chop all the ingredients and add in blender. Yes, it’s that simple.

Serve in a nice glass with appropriate decoration (e.g. chopped red and green peppers or a couple of parsley leaves).
