I love fajitas. In fact I love all Mexican food. What I am most impressed by it is how easy it is to make it at home (and how easy it is to show off with it!).
I used a fantastic, all-inclusive fajitas kit from Lidl’s (The El Tequito Wrap Kit) ready-made pitas, spice mix and tomato salsa and added all the fresh ingredients. It literally took less than 30 minutes to prepare the whole meal for four people (that’s right, 30 minutes!)
1 ripe avocado
1 chopped tomato
1 chopped onion
bunch of coriander (chopped)
juice from 1 lemon or lime
1 chopped tomato
1/2 chopped onion
2 green peppers cut in long strips
2 orange peppers cut in long strips
2 red peppers cut in long strips
1 large onion cut in rings
1/2 bag of prawns
1 fajita spice mix from El Tequito Fajita Wrap Kit (Lidl’s)

Cut and mash avocado with a fork. Add the rest of the thinly chopped ingredients with the lemon juice and mix well (it’s that easy!)
Simply mix the chopped tomatoes with the onion and add salt and pepper to taste
Add a spoon of olive oil and fry the onion for 1-2 minutes. Add all of the fresh ingredients and mix in the fajita spice mix. Fry lightly for 7-8 minutes until the peppers are soft and add the tomato fajita salsa. Mix well and let it settle for 10 minutes.
For the pitas: 1-2 drops of water on each and warm for 5 minutes. Serve them immediately.
I also added sheep’s yoghurt (instead of sour cream) to perfect the fajita experience but feel free to make your pita as you prefer.
You can always use chicken or beef strips if you prefer.
