Easy buckwheat salad

Super easy and super yummy! Meet the tastiest buckwheat salad. I am all for lemon and feta flavours so it’s ideal for a light lunch or side dish. Kids loved it too!

Ingredients from Lidl*
2 cups of buckwheat (or quinoa)
1/2 cup of rice
1/3 of Galpo Feta cheese
1/4 cup bleached almonds (feel free to use more)
3 dates or 1/4 cup of raisins
2 spring onions
1/2 red onion
1 large cucumber
3-4 black olives (optional)
A few stalks of parsley
For the dressing
Juice of 1 lemon
3 tbs of virgin olive oil
Salt & pepper to taste
*Except buckwheat
Boil the buckwheat or quinoa until ready (15 minutes should do).
Boil the rice for 20-25 minutes until ready.
While they are being prepared chop all the ingredients in small pieces (remove pips where necessary)
When the rice and buckwheat are ready mix and let them cool down, when they do add the rest of the ingredients.
To make the dressing squeeze the lemon juice, add the oil, salt & pepper and mix well.
When ready add it to the buckwheat and mix well.
