Chocolate cheese cake (without the cheese)

When I first tried this dessert I felt like I ‘ve discovered a whole new planet. How can such a yummy chocolate cake be so nutritious? The avocado is in fact a perfect substitute for butter as it’s neutral in flavour and really fatty in texture, while the dates and honey add just the perfect sweetness.
And for the harder to convince…just don’t tell them there’s avocado. That did it for Mr Proud Cypriot.
Ingredients (*from Lidl)
For the base
12 pitted dates
1.5 cup of coconut oil (melted)
350g of mixed nuts (walnuts, hazelnuts, Brazil nuts – you can also use one type of these)*
For the chocolate mix
4 tablespoons of good quality cocoa *
1 cup of coconut oil (melted)
5 tablespoons of honey * (taste it and check if it needs more)
5 very ripe avocados *
In a food processor add the dates and nuts and grind for a few seconds (not too much). Add the coconut oil and mix well. Press them in a 30cm round tin and put in the freezer for minimum 15 minutes.
In the meantime mash the avocados (without the skin and pip obviously), and add the remaining ingredients. Mix well with a processor or by hand.Take out the base from the freezer and spread over the chocolate mousse. Keep in the fridge for at least an hour and….ready!
