Honey & Lime Rainbow Salad

Right when you thought fruit salad was just a fruit salad this comes along. Sweet yet sour, refreshing and of course…nutritious is indeed a great (and easy) summer dessert, snack or breakfast. Its lightly sweet and aromatic flavour makes all the difference.
I used fresh fruit from Lidl and frozen blueberries. Other ideas include: kiwis, mandarins, blackberries and/or raspberries.

 

Ingredients (* from Lidl)

Salad

  • 1 pint fresh strawberries , diced *
  • 1 pint fresh pineapple , diced *
  • 1 cup frozen blueberries *
  • 8-10 red grapes , diced into halves *
  • 1/2 orange
  • 2 ripe bananas , diced*

Honey Lime Dressing

  • 1/4 cup honey
  • 2 tsp lime zest (zest of 2 medium limes)
  • 1 tbsp fresh lime juice
  • Optional: diced basil
Method

Simply cut the fruit in a bowl. Mix the dressing ingredients and add in the bowl. Keep in the fridge and consume for up to 2 days although best eaten fresh.
