So apart from pizza my second obsession are sandwiches. Call it my comfort food. Although I keep trying to find new combos my favourites remain the same: lots of cheese, lots of green and some extras (avocado and eggs in this case). To cut the long story short, here’s 2 ways you can enjoy the green superfood in summer sandwiches. I used Tilsiter cheese which is quite soft and mild, ideal to be combined with the neutral avocado flavour. I also used the Cypriot “koulouri” with sesame perfecting the “comfort food” experience.
