I have been looking for a healthy chocolate pancake recipe for some time now. I tried oat banana pancakes successfully but for kids chocolate never fails. Fluffy, soft and yummy for kids, grown-ups and any pancake lover, very easy to make and even easier to eat. You can substitute the milk with any milk of choice and the honey with maple syrup.
Ingredients (Ingredients from Lidl)
- 3 medium ripe bananas*
- 1 cup of whole milk*
- 3 eggs*
- 1 cup of flour* (wholemeal is good)
- 1 tsp. of baking powder
- 1/2 tsp. of baking soda
- 1/4 cup cocoa*
- 1/3 cup honey
- 1 tbs butter for cooking
- Honey and bananas to serve
Mix the flour, baking powder, baking soda and cocoa in one bowl. Blend the ripe bananas with the eggs and milk until there are no lumps. Mix the dry ingredients with the liquid ingredients until smooth. The 1/3 cup of honey is optional as you will also add honey to serve but I added it as my kids like to eat the pancakes on their own as well.
To cook, add the butter in a pan until melted and place a large spoon of the mix in the pan (you can add 2 at a time depending on the size of your pan). As they cook flip them around (it may take 1-2 tries to flip them intact). I used medium heat as it was easier for the pancakes to cook evenly.
