Sometimes, especially in the summer, there comes a time when you just need to make good food with little effort, quick and easy. In all fairness I made the beef kofta mostly for me and Mr Proud Cypriot as I thought it would have been slightly spicy for the kids, but I ended up having pita with yogurt and salad as they devoured all the meat.
It takes 20 minutes to cook, and another 5 to make the salad so… there you go!

Ingredients from Alpha Mega
Raw Beef Kofta
2 tomatoes
2 cucumbers
2 cups of Parsley chopped parsley
1 Onion – optional
High quality yogurt
3 Greek Pittas
Cumin, Salt and Pepper to taste


Method
Chop the cucumber, tomatoes and parlsey
Pre-heat the oven to 200C. Cook the Beef Kofta for 20 minutes. Add the pittas for 5 minutes. Add everything in an open pita and top with yogurt and cumin. Serve immediately
