Sugar-free banana muffins

Post quarantine banana madness there come banana muffins! An ideal snack for kids not only for school, but for the afternoon as well.


2 ripe bananas

2 eggs beaten

1 1/2 cups of all purpose flour

1/2 cup butter

1/2 cup coconut sugar or other sweetener

1 tsp salt

1 tsp bicarbonate soda

1 tbs baking powder

1 tbs vanilla essence


Preheat oven to 180C. Mix the eggs, the softened butter and the sugar. Add the bananas and the vanilla essence and mix until there are no big lumps. In a separate bowl mix the dry ingredients well and add to the wet mixture.

Pour in a 12-muffin tray and bake for 30′.
